In case you can't make it for lunch, here is the pasta recipe
Shirley's CopyCat Carrabba's Italian Grill
Penne Pasta Franco Veganized
Recipe Serves 8-10
16 oz. package Penne Pasta
3 tablespoons olive oil
8 oz. package fresh mushrooms, cleaned & quartered
1 cup coarsely chopped onion
8 oz. pkg. Morning Star Chik'n Strips, defrosted & cut in half
3 or 4 garlic cloves, minced
1 cup chopped sun-dried tomatoes in oil (do not drain)
1 12 oz. jar marinated artichokes (do not drain)
1 cup Kalamata olives, drained & sliced in half
3 tablespoons nutritional yeast ( or Kal or Red Star)*
1 teaspoon Italian herb seasoning
1/2 teaspoon salt or to taste
1/4 teaspoon black pepper
1. Cook pasta according to package instructions.
2. While pasta is cooking, saute onions, mushrooms and Chik'n strips in oil about 7 minutes in a skillet, add garlic and saute one more minute.
3. Drain pasta when done and toss in mushrooms & onions plus sun dried tomatoes, artichokes and Kalamata olives.
4. Stir in nutritional yeast*, Italian seasoning, salt & pepper.
*Nutritional yeast Adds protein & B vitamins and a cheesy flavor

Shirley's Unchicken Broth Powder
I like to double or quadruple this recipe. It keeps a long time. I store my potato flour in the freezer. Use this whenever a recipe calls for chicken broth.
2 tablespoons potato flour (NOT potato starch!)
2 tablespoons nutritional yeast
1 & 1/2 tablespoons salt
1 tablespoon onion powder
1 teaspoon sugar, optional
1 teaspoon poultry seasoning (blend of herbs from any supermarket)
1/4 teaspoon turmeric
Mix ingredients together and store in a glass jar. For recipes calling for chicken broth,
Whisk 1 or 1 & 1/2 teaspoons powder into a cup of hot water.

Actress Lily Tomlin, who has taken up other animal rights causes over
the years, has sent a letter to Dallas Mayor Tom Leppert urging him to
send Jenny to the Elephant Sanctuary in Tennessee. "Jenny's plight grabbed my heart because, after spending most of her
life in captivity, she finally has a chance to live a life much closer
to what nature intended for her," Ms. Tomlin said in a statement
released by Concerned Citizens for Jenny. "I strongly urge the City of
Dallas to do the right thing and give Jenny the life she deserves at

Katrina Animal Memorial Ceremony in New Orleans
On Aug. 29, 2008, representatives from American Humane and other
animal welfare and animal rescue organizations -- and many others --
will take part in a memorial service in New Orleans commemorating the
third anniversary of
Hurricane Katrina. The ceremonies will include the
unveiling of a statue honoring
the many animals that were lost in the
storm and its aftermath.
